This is simply the original MIDI file (ripped from the game), played with the "airfont 360" soundfont. I had to manually change the instruments to the closest to the original instruments, or at least what I felt sounded best. This is also how it might sound if it was in Mario Kart 8 (except they'd have extra funky guitar parts and stuff).
